Ingredients

  • For 4 people:
  • 16 Artichokes
  • 2 Potatoes
  • 3 Leeks
  • 1 Onion
  • 4 Cloves of garlic
  • 2 Celery sticks
  • Water
  • Olive oil
  • Salt
  • Parsley (for decorating)


Steps:

For making the purée, peel and cut the onion and the potatoes and put them in the pot. Clean and cut the leeks and the celery and add them to the pot. Fill it with two fingers of water, season it, put the cover and cook on a low heat for minutes. Open the pot, remove the excess of water and grind with the electric beater. Save it warm.

Clean the artichokes, cut them in four, and cook them on a moderated heat with a stream of oil and a bit of salt. Save it.

Peel and cut the cloves of garlic and brown them on a pan with a stream of oil. Remove the excess of oil. Serve the purée in a deep dish and put over it some artichokes. Spread the garlic and decorate with some parsley.

Tip

The artichokes might turn dark while its coocking. For preventing this, avoid aluminium recipients and replace them with recipients made of clay or stainless steel. It is important to remove the tail just before cooking it. Also spraying them with lemon juice prevents them from getting dark.

This plate contains ingredients that are good for purifying the organism of the toxins we have been accumulating during the day.

Thanks to the intense diuretic action it applies, this plate will remove the liquid retention caused during the day.

This liquid retention is bigger in stressed people, in those who eat in a disorganized way at midday, or in those who doesn’t do a lot of exercise. And the same happens with people in hormonal treatment, suffering from corticoids or with anti-inflammatories. They also are who will feel more the diuretic effect of the plate.

Because of its high content in fibre it also will help us with the intestinal transit. It is a very appropiated recipe for those who have proposed lowering some weight.

For its antioxidant and anti-inflamatory properties, the ingredients of this recipe (artichoke, leeks, onion and garlic) will help us to fight better colds and flus.

It must not be forgotten that carbohydrates have to be present in all meals, either in the form of cereals, legumes or, like this case, potatoes.
